Another score for Bothell.

Fresh off a Bobby Flay victory last week on the Food Network, Vietnamese-born chef Thoa Nguyen, chef/owner of Wabi-Sabi in Columbia City and the Chinoise Café in the Issaquah Highlands (formerly in upper Queen Anne), is cooking up something new. Nguyen has just announced she will open Sushi Chinoise in Bothell’s new Beardslee Crossing development (19122 Beardslee Blvd), hopefully by October.

Sushi Chinoise will join Nick Wiltz’s Amaro Bistro, open as of January, and John Howie‘s Beardslee Public House, coming in July, in the newly burgeoning East Side neighborhood. While both of Nguyen’s current restaurants feature sushi, it will be front and center at Sushi Chinoise. Decor-wise, expect a minimalist, modern design in the just under 2,400-square-foot space (about the same size as Issaquah’s Chinoise Café), with three sides of floor-to-ceiling windows and distressed wood accents.
